Chocolate Truffle Making Workshop
In this class we will learn the delicate art of chocolate truffle making.
We will start with tasting a few different varieties of fair trade
chocolate from various regions. We will then work in teams to create a
basic dark chocolate ganache from scratch using stoneground
chocolate & farm fresh cream {a ganache in which we can later dip
bread and fruit into}.
Finish the class by learning the basics of tempering chocolate, using
the seeding method, to create bright molded truffles. Working again in
teams we will fill our truffles with tempered dark chocolate, then the
local Cascadia ingredients of our choice. You will leave this class with
a dozen (or more) chocolates in a myriad of flavors ranging from
lemon fir, to salted cajeta (a creamy goat milk caramel), a nootka
rosewater ganache, and more. Take this time to share a sweet
moment with a loved one, make some new friends, and dive into the
sacred & messy alchemy of chocolate making.
